Here comes my favorite.
A leftover pasta, born from the desire to avoid wasting old crusted bread.
So we mix it with eggs and Parmigiano cheese to get this sort of fat spaghetti.
You can have it as a soup, in meat broth for sure.
But I prefer passatelli served as pasta, with porcini mushrooms in Autumn, with a seafood ragù of red mullet, or even as a carbonara.
You will find it from Rimini to Modena, but Romagna is its true kingdom.
