Back in 1598, Giovanni Francesco Justi—an early version of the Giusti family name—registered with the Guild of Lard and Sausage Makers in Modena.
Just a few years later, in 1605, the family opened a small salumeria in the same location where it still stands today.
For centuries, the Salumeria Giusti was renowned for its cured meats and the famous Giusti balsamic vinegar, which even won medals at 19th-century world expos in Paris.
The salumeria’s reputation attracted notable clients like Duke Cesare d’Este and composer Gioachino Rossini, who famously wrote from Paris asking for Giusti’s “fine sausage.”
In 1980, the Giusti family passed the salumeria to Adriano "Nano" Morandi, a loyal apprentice who had worked there for years.
Nano had the brilliant idea of transforming the old butcher’s workshop into a small restaurant, and in 1989, he opened Hosteria Giusti with just four tables.
